APPLE BREAD
2 v. unsalted butter
Sugar 1 / 2 cup
1 teaspoon cinnamon
1 apple
1 package active dry yeast
3 / cup hot water 4
Sugar 1 / 4 cup
1 teaspoon salt tea
1 cup all purpose flour
1 egg
Shortening 1 / 4 cup
1 1 / 4 cups flour
Melt the butter in a saucepan. Mix 1 / 2 cup sugar and cinnamon and sprinkle over butter. Apple cut into thin slices and place in the ranks of the sugar mixture. Sprinkle a few raisins over apples if desired. Mix with a spoon in a large baking bowl of hot water. Add 1 / 4 cup sugar, salt and 1 cup of flour. Beat 2 minutes or until the dough drops from the spoon-shaped leaves. Add egg, butter and remaining flour and beat until smooth. Drop by small spoonfuls of dough over apples in pan. Cover the pan and let rise in warm place until doubled, 50 to 60 minutes. Preheat oven to 375 degrees. Bake 30 to 35 minutes or until browned. Immediately remove cake from pan by turning upside down on a plate. Use an 9x9x2-in pan.
PUMPKIN PECAN BREAD
Is a recipe that occurred in an old issue of the American Heart Association, several years ago.
3 1 / 2 cups all-purpose flour
2 v. tea baking soda
1 1 / 2 c. Salt tea
1 1 / 2 c. Cinnamon tea
1 teaspoon nutmeg
1 cup sugar
1 cup oil
4 eggs or egg substitutes (or egg whites 
2 Water / 3 cup
2 cups canned pumpkin
1 cup chopped walnuts
Soda Sift together the flour, salt, cinnamon and nutmeg. Add sugar to the flour mixture and mix well. Make a well in the center of the dry ingredients and add all ingredients at once following: oil, eggs, water and pumpkin. Mix well then add nuts. Pour dough into 4 8x4-inch loaf pan, filling each half full cup. Bake at 350 degrees for one hour or until wooden pick inserted in center comes out clean.
Yield: 4 loaves 1 / 16 of a loaf of bread is about 85 calories
