Today's busy families need all the help they can be seated family meal. Here is a menu to help. The meal begins with a Yankee pot roast pot Mud easy. Add Strawberry Pretzel salad which serves as both a salad and dessert. And the best part is that it can be made ahead and refrigerated until ready to serve. It is a simple meal, but it is much better for your family fast food.
Yankee Pot Roast
2 1 / 2 to 3 pounds beef roast
£ 1 med apple baking potatoes, washed, quartered
2 large carrots, cut into inch
1 medium onion, quartet
2 bay leaves
1 teaspoon dried rosemary
1 / 2 c. Dried thyme tea
1 / 2 cup beef broth Sodium
Trim excess fat from beef and discard. Cut into portions and sprinkle with salt and pepper. Mix vegetables and spices in slow cooker. Place pieces of meat over the vegetables. Pour broth over beef. Cover and cook on low 8 to 9 hours or until meat is tender. Discard bay leaves before serving.
Note: 1 large parsnip, cut into small pieces can be added for more flavor.
Used six years. Parsnips per serving: 494 calories, 48 g protein, 35 g carbohydrate
Strawberry-PRETZEL SALAD
2 cups coarsely ground unsalted crackers
1 / 4 cup Splenda ® Brown Sugar Blend
1 / cup butter, melted 2
8 ounces cream cheese
3 / 4 cup Splenda
Sugar 1 small tub whipped topping
2 small boxes of sugar free strawberry gelatin
2 cups hot water
2 packages (10 ounces each sugar) frozen strawberries, without
Preheat oven to 350 degrees.
Mix pretzels, brown sugar mixture and butter, press into bottom of a 9 x 13 inches. Bake 8 minutes. Cool the crust.
Mix cream cheese with Splenda and gown. Double whipped cream into cream cheese mixture Spread over crust. Dissolve gelatin in hot water, add frozen berries. When gelatin begins to thicken, pour over cream cheese mixture. Refrigerate until ready to serve.
Note: May be replaced by Graham crackers pretzels.
